DAY 61: Carmelized

Sometimes I like doing research on things I have no need to understand. Imagine all the rad facts at your fingertips, and how much better you can understand something by just googling it. This in-depth search started with the question of, why onions caramelize. I know, it's a weird one, but caramelized onions are sweet and delicious, and deserving of some understanding. Apparently, there are sugars in onions that break down and separate when introduced to heat. My conclusion... onions are the earth's hidden gummy bears.
